A month of dinners...

Last night we enjoyed a new recipe, North Carolina Barbecue. 

I was motivated to make barbecue because of my co-worker, Sasha. She made barbecue for her family a few weeks ago and it inspired me to add it to our month of dinners.  Ben made it for us and we enjoyed it again tonight. 

You will need:
3-4 pounds of pork loin, roast or shoulder (we used 3.5 pounds of pork shoulder)
1 cup apple cider vinegar
1/4 cup, plus 1 Tbsp., prepared mustard
1/4 cup, plus 1 Tbsp., Worcestershire sauce
2 tsp. red pepper flakes (we substituted with black pepper)

 
Step 1: Trim fat from pork.  Place in slow cooker.

Step 2: In a bowl, mix remaining ingredients together.  Spoon over meat.

Step 3: Cover and cook on High for 5 hours, or low for 8 hours;
or until meat is tender but not dry.

Step 4: Slice, or break meat apart, and serve drizzled with the cooking juices.
If you use the meat for sandwiches, you'll have enough for 8-12 sandwiches.

We added corn and biscuits to our dinner.
